soups are great. Been quite ill myself over the last 5 days.

buy a roasted chicken from the supermarket if unwell. For a single person that's minimum 5 or 6 meals for the NZD14$.

Then slow boil the carcass for a while and what's left is authentic chicken stock. Strain that into two containers freeze them for later use. Pick thru the carcass and there's still meat there.

Use half the chicken stock into a big saucepan - depends o how many but let's aim for 2 ppl.

if no fresh corn, then supermaket canned corn kernels are great, half a can straight in. Blck beans, and kidney beans - wash them in a sieve first out of the can, then put them in,

2 x maggi 2 min noodles, chuck them in, don't put the satchel in to the mix, keep that for something else.

Bring to boil. If you've got frozen vegies ? Nows the time to pour them in. Not much but enough to to see them when you stir.

Now add in the chicken meat you either saved or reclaimed. Chuck that in.

Add salt, simmer, and serve after about 40 min.

cheers

The broth base of the Wonton Noodle Soup from Chinese Cuisine, of late, great Mercury Plaza fame, now re-opened on Pah Rd in Epsom and totally worth the extra drive (especially if you’re hungover) is hands down the best broth in Tāmaki Makaurau and I defy anyone to tell me otherwise.
